... what to do for our meal this evening. I'm totally uninspired!!
It's typical isn't it - you go out and do a big food shop, then come home and find that you still haven't got the makings of a decent meal.
Foolishly I shopped for the weekend without remembering that there was still a day to get through first! I may just have to raid the freezer.
Talking of the freezer, I made a couple of fabulous Chocolate Orange Tortes this afternoon. One to try this weekend, and the other will do for Christmas as they can be frozen for a month or so. You actually use Terry's Dark Chocolate Oranges, along with a hefty slug of Cointreau to make the mousse, which obviously has eggs and cream added to it. Then you make a syrup with MORE COINTREAU and very thin slivers of orange peel into which you immerse sponge fingers (or Rich Tea biscuits). Line loaf tins with cling film, pour in alternate layers of mousse and soggy sponge and pop it into the freezer, remembering to take it out again no more than an hour before you want to serve it. Dead easy and very quick!
However, this still doesn't solve the problem of what to do for tea tonight!
